Veal Scallopini


Veal
Flour + Salt + Pepper
Egg Yolk + Water
Panko Bread Crumbs
Oil/Butter


Mix flour with salt and pepper. Dredge scallopini cut veal in flour mixture. Coat in egg yolk that has been mixed with a half tablespoon of water. Coat immediately in panko crumbs. Put in fridge. Heat in large enameled dutch oven butter and oil on medium high heat. Place in veal, fry 2-2.5 min per side until golden brown (inside should be just pink).
