Pesto Chicken
3 Chicken Breasts
1-2 White or Yellow Onions
8 oz to 1 lb White Mushrooms
1 Package of Grape Tomatoes
1 4-6 serving Jar of Pesto
1 lb Pasta
First cook pasta according to directions, slightly less cooked than normal.
In large enameled dutch oven heat oil on medium high and fry chicken breasts until golden on both sides. Doesn't need to be cooked through. Turn to medium, add sliced onions. Cook until melted and golden. Add sliced mushrooms and heat until cooked. Add halved tomatoes and stir to combine. Cube chicken and add. Heat until chicken cooked through. Add pesto and combine. Add pasta and mix throughly.
