Ingredients
Wet ingredients:
3 medium ripe bananas
¾ cup drippy peanut butter (just peanuts and salt or some other nut butter or mix)
2 large eggs
¼ cup pure maple syrup
2 teaspoons vanilla extract
1/2 tablespoon milk (almond, oat, dairy etc)
Dry ingredients:
1 cup oats blitzed into a flour in food processor
1 teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon salt
⅓ cup mini chocolate chips (plus 2-3 tablespoons for sprinkling on top)
Instructions
Preheat oven to 350 degrees Line a 12-cup muffin liner with muffin liners and spray the inside with nonstick cooking spray to prevent muffins from sticking to liners.
In a large bowl, mix together the mashed bananas, peanut butter, eggs, pure maple syrup, vanilla extract and milk of choice until smooth.
Next stir in the oat flour, baking powder, cinnamon and salt until smooth. Fold in the chocolate chips. Evenly divide batter into muffin liners.
Bake 20-25 minutes until toothpick comes out clean. Transfer muffins to wire rack to cool and enjoy! Makes 12 muffins.

1/4 napa cabbage, thinly sliced
4-6 eggs (depending on size of cabbage)
~0.5 lb shrimp, cut into small bite sized chunks
2-3 green onions, sliced
Dash of White Pepper
Dash of Garlic Powder

Use Japanese bbq sauce instead of gravy

1. Stir together all ingredients, let rest for ~5-10 min while cast iron heats
2. Heat cast iron pan (or any frying pan) to medium heat
3. Add peanut oil
4. Drop mixture by heaping tablespoon
5. Flatten out with back of spatula, should be ~4 inches in diameter (don't make too large otherwise difficult to flip)
6. Cook ~3 min per side
OR
Extra easy:
2 egg
1.5 c thin sliced Napa cabbage
Dash salt
Dash sugar
Cook for 6 min or so in hot griddle with oil

Note: The amounts I’ve listed are approximate because I don’t use a written recipe. The following directions will make 3 patties. Repeat to make more.
1 Tbsp chopped green onion
1/3 cup chopped protein (chicken, shrimp or pork)
Dash of salt
1/8 tsp sugar

Egg foo young directions: Add everything together in a bowl. Stir until egg is completely incorporated throughout. Let sit for about a minute. Preheat non-stick pan to medium heat and add about 1.5 to 2 tablespoons oil. Then give the ingredients a few stirs before pouring 3 equal size patties into pan. They should be approximately the size of a burger patty. Flip when bottom side is golden brown. Then cook for another couple of minutes or until egg is fully cooked and golden brown.
GRAVY RECIPE
(First make a roux by heating 1 cup of canola oil in small pot then stirring in 1 cup of flour until mixture is smooth and lightly golden)
4 cups water
4 tsp Better Than Bouillon beef concentrate
Salt and dash of sugar taste
Gravy directions: Boil water then add Better Than Bouillon. When at full boil slowly whisk in roux until desired thickness (you do not need all of it). Then add a dash of salt and sugar to taste.

2 lb Turkey
1/2 chopped yellow onion
2 stalk lemon grass
4 cloves garlic
3-4 green onion
3 T fish sauce
5 T light soy
2 T sugar
INGREDIENTS
1.5 Lbs ground turkey or pork
1/4 yellow onion chopped
1 stalk lemongrass finely chopped
2 cloves garlic finely chopped
1-2 stalks green onion finely chopped
SEASONINGS
2 Tbsp fish sauce
4 Tbsp soy sauce
4 Tbsp sugar (can be reduced if desired)
1/2 tsp salt
Note: When chopping lemongrass only use the thicker bottom part.
Start by mixing seasoning ingredients together until sugar is mostly dissolved. In a large bowl add meat and pour In marinade. Mix together thoroughly. Then incorporate lemongrass, onion, garlic and green onion into the meat. Marinate at least 30 minutes or overnight. You can test cook a spoonful of meat to see if you need to adjust seasonings. Form 1.5 inch meatballs and pan fry until done. Turkey is great but fattier meat like ground pork would make these more juicy. Enjoy!

Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ cup unsalted butter
1 cup white sugar
5 eggs
½ teaspoon vanilla extract
2 cups whole milk
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 ½ cups heavy whipping cream
1 cup white sugar
1 teaspoon vanilla extract
Directions
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
Sift flour and baking powder together; set aside.
Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy. Add eggs and vanilla; beat well. Add flour mixture, about 1/2 cup at a time, mixing until well blended. Pour batter into the prepared pan.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Pierce cake all over with a fork; let cool to room temperature.
Mix whole milk, condensed milk, and evaporated milk together in a bowl; pour over the top of the cooled cake and allow to soak in.
Whip cream, remaining 1 cup of sugar, and 1 teaspoon vanilla in a chilled glass or metal bowl with an electric mixer until thick. Spread over the top of the filling. Keep cake refrigerated until serving.

INGREDIENTS
1/2 lb ground pork
1.5 teaspoon cornstarch
1 teaspoon sesame oil
1/4 teaspoon white pepper
1 thumb minced ginger
5 cloves garlic (minced)
9 fresh shiitake mushrooms (finely sliced)
3 tablespoons sweet bean sauce
3 tablespoons ground bean sauce
1 tablespoon dark soy sauce
1/2 cup water
1 zucchini (julienned)
8 oz. dried wheat noodles (or 1 pound fresh wheat noodles)
1 cup carrots (julienned)
1/2 cup bean sprouts
3 scallions (julienned)
INSTRUCTIONS
Marinate the pork with the following for 15 minutes: cornstarch, sesame oil, white pepper.
Heat a tablespoon oil (or less or none) in your wok over medium heat and add marinated ground pork to the wok. Cook for a minute to brown it, and then add the ginger, garlic, and mushrooms. Stir fry everything together for another 2-3 minutes.
Add the sweet bean sauce, ground bean sauce, dark soy sauce, and water, stirring everything together well. Lower the heat and cover the wok. Add zucchini Simmer the sauce for 15-20 minutes, stirring occasionally to prevent sticking.
While that’s happening, cook the noodles according to the package directions.
In last 5 min of simmer add carrots, bean spouts and scallions.
Mix with the sauce and toss with the julienned carrots, cucumbers, and scallions. This amount of sauce should be good for 4 servings.
