 Chocolate Strawberry Cake 

6 servings (original was 12 servings, 3x9" pans. This is 3x 6" pans)

Equipment

Ingredients
• 1/4 cup unsweetened cocoa powder (20g)
• 1/2 cup boiling water or very hot coffee (120ml)
• 1.5 cups all-purpose flour (190g)
• 1 1/4 cups granulated sugar (250g)
• 1 1/4 teaspoons baking soda
• 3/4 teaspoons baking powder
• 0.5 teaspoon salt
• 0.5 cup vegetable oil (120ml)
• 0.5 cup whole or low-fat buttermilk room temperature (120ml)
• 1.5 large eggs room temperature
• 0.5 tablespoon vanilla extract

For the Strawberry Buttercream:
• 3/4 cups (1.5 sticks) unsalted butter room temperature (170g)
• pinch of salt
• 3 to 4 cups confectioners’ sugar (360g - 480g)
• 1 cups freeze dried strawberries, masked into powder (original: ½ cup chopped fresh strawberries (about 6 berries))

For the Ganache:
• 2 ounces semi-sweet chocolate bar chopped (49g)
• 1/4 cup heavy whipping cream (60 ml)

For the Garnish:
• fresh strawberries

Instructions
For the Chocolate Cake:
1. Preheat the oven to 350F. Butter 3 (6-inch) round cake pans or spray with baking spray and line the bottoms with parchment paper. Wrap the outside with water-soaked fabric baking strips if you have them.
2. Into a medium bowl, sift the cocoa powder. Whisk in the hot water or coffee until the cocoa is dissolved. Let cool for 10 minutes.
3. Meanwhile, in a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt. To the cooled cocoa mixture, add the oil, buttermilk, eggs, and vanilla and whisk until well combined. Pour the cocoa mixture into the flour mixture and whisk until fully incorporated. Divide the batter among the cake pans.
4. Bake for 30 minutes (or less... check!( or until the cakes are springy to the touch and just starting to pull away from the sides of the pan. (If you have to bake the cakes on separate oven racks, carefully rotate them after 20 minutes of baking.) Let cool completely in the pans. Run a knife around the edge of the cakes to loosen them and invert onto a wire rack. Remove and discard the parchment paper.

For the Strawberry Buttercream:
1. In a large mixing bowl or the bowl of a stand mixer fitted with the whisk attachment, beat the butter and a pinch of salt on medium speed until very light and fluffy, about 5 minutes.
2. Reduce the speed to low. With the mixer running, gradually add in the sugar, ½ a cup at a time, alternating with a tablespoon of the strawberries. Stop and scrape down the bowl a few times during mixing. Once the sugar is incorporated, beat on medium speed until light and fluffy, about 1 minute.
3. Place one cake layer on a serving plate. Top with 1/2 cup of frosting and spread into an even layer. Top with another cake layer and another 1/2 cup of frosting. Add the final layer and spread the remaining frosting all over the outside of the cake. Chill for at least 1 hour or up to 1 day.

For the Ganache:
1.Place the chopped chocolate in a medium heat-proof bowl.
2. In a small saucepan, heat the cream over medium-high heat just until simmering. Immediately pour over the chocolate and let stand for 5 minutes. Whisk together until the chocolate is fully melted and combined.
3. Spread over the top of the cake, letting some drip down the sides. Top with fresh berries. Chill and let the ganache set for at least 30 minutes before serving. Store the cake refrigerated for up to 5 days.

Notes
• Make sure to sift the cocoa powder. Sifting ensures the cocoa powder is lump-free and is easy to combine with the hot water.
• Chill the frosted cake before adding the ganache drip. This helps the ganache set quickly and not drip all the way to the bottom of the cake.

Burger Buns (Low Sugar)

Ingredients

1 2/3 cup whole milk (at room temperature)
1 large egg (at room temperature)
1.5 tablespoons sugar (half of original 3T)
4 cups all-purpose flour
1 tablespoon active dry yeast or instant yeast
1 1/2 teaspoons salt

Instructions
In the bowl of a stand mixer fitted with a dough hook attachment, add the ingredients in the following order: 
1 2/3 c milk,
1 egg, 
1.5 T sugar, 
4 c all-purpose flour,
1T yeast
1.5t salt. 

Turn on the mixer to “stir,” and knead for 15 minutes, occasionally stopping the mixer to push the dough together. 

Cover the dough with a damp towel, and place in a warm spot until the dough has doubled in size (about 1-2 hours). 


After the dough has doubled in size, put it back into the mixer and knead on low speed for another 5 minutes to get rid of air bubbles. Then transfer the dough to a lightly floured surface, and cut it into 10 equal pieces (about 100-110g each). 

Form into balls, Place it on an un-greased sheet pan.

Cover the dough balls with a dry kitchen towel for the second proofing.

Proof on the counter for 30-60 minutes, until the buns have increased in size by 1.5x.

Bake at 350 for 15 minutes until golden brown.



Take a dough ball, and knead it with the heel of your hand about a dozen times to get rid of more air bubbles. Then shape it into a ball, ensuring the top is as smooth as you can manage. Place it on an un-greased sheet pan. Repeat with the remaining dough balls, spacing them about 2 inches (5cm) apart. (When they bake, it is okay if they end up slightly touching, as you can easily pull them apart.)
Next, cover the dough balls with a dry kitchen towel for the second proofing. Proof on the counter for 30-60 minutes, until the buns have increased in size by 1.5x.
When the buns are almost done proofing, position a rack in the center of the oven, and preheat it to 350° F/175°C. Bake for 15 minutes, or until golden brown (if making smaller buns, reduce baking time as needed by a few minutes). Remove from the oven and cool before cutting into them.

  • 3 Eggs

  • 1/2 C Flour

  • 1/2 C Milk

  • 1 Tablespoon Sugar

  • Pinch of Nutmeg

Preheat oven to 425 F.

Combine eggs, flour, milk, sugar and nutmeg in a blender jar and blend until smooth. Batter may also be mixed by hand.

Place butter in a heavy 10-inch skillet or baking dish and place in the oven. As soon as the butter has melted (watch it so it doesn't burn) add the batter to the pan, return pan to the oven and bake for 20 minutes, until pancake is puffed and golden.

Lower oven temperature to 300F and bake for another 5 minutes.

Remove from oven and cut into wedges and serve at once topped with syrup, preserves, confectioner's sugar or cinnamon sugar.

Mini Funfetti Cake

 This is a quarter recipe for 3x 4" cakes. (but logistically will make two tall 4" cakes and then cut in half) Original full is for 3x 9" cakes.

Cake

1 scant cup cake flour

1/4 t baking powder

1/4 t baking soda

1/4 t salt


5 T butter

1/2 c sugar


1 t vinegar + 1/3 c milk (let sit for 5 min)


1 T + 1 t of peanut oil


1 egg, room temp

1/2 egg white, room temp

1 t vanilla


1/4 scant cup sprinkles


1. Preheat oven to 350°F (177°C). Butter and flour three 4-inch cake pans, line with parchment paper rounds, then grease the parchment paper. Suggestion: fit with wet cake strips.

2. Whisk the cake flour, baking powder, baking soda, and salt together in a large bowl. Set aside.

3. Using KitchenAid with a paddle attachment, beat the butter and sugar together on high speed for 5 minutes until completely creamed together and fluffy. 

4. Add vinegar to milk to make butter milk and stir.

5. Add the oil and beat for 1 minute until combined. 

6. Add the eggs, egg whites, and vanilla extract and beat on medium-high speed until combined.

7. Add dry ingredients and buttermilk in three additions, mixing after each addition just until incorporated. Do not over-mix this batter. The batter will be velvety and thick. 

8. Gently fold in the sprinkles. 

9. Pour and spread the batter evenly into each cake pan.

10. Bake for around 28–30 minutes or until the cakes are baked through. Tent the cakes with foil after about 15 minutes to prevent the sides and top from over-browning. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it’s done.

11. Allow cakes to cool in the pans set on a wire rack for 20 minutes. Run a knife around the edges and then remove cakes from pans. Place cakes directly on wire racks to cool completely. The cakes must be completely cool before frosting and assembling.



Make the frosting: 

1. In a large bowl using a stand mixer fitted with a whisk or paddle attachment, beat the butter on medium speed until creamy, about 2 minutes. 

2. Add confectioners’ sugar, cream, vanilla extract, and salt. Beat on low speed for 30 seconds and then switch to high speed and beat for 2 minutes.  Add more confectioners’ sugar if frosting seems too thin; more cream if frosting is too thick; or an extra pinch of salt if frosting is too sweet.


Assemble cake + apply crumb coat: 

1. First, using a large serrated knife, slice a thin layer off the tops of the cakes to create a flat surface. Or use the cake slicer thing.

2. Place one cake layer on your cake stand or serving plate. Using a large icing spatula or small offset spatula, evenly cover the top with about 0.5 cup (about 125g) of frosting. Repeat with second cake layer, 0.5  more cup of frosting, and then the top cake layer. Spread a thin layer of frosting on the top and around the sides as a crumb coat. Run a bench scraper around the cake to smooth out crumb coat. 

3. Chill uncovered in the refrigerator for at least 30 minutes and up to 3 hours to set the crumb coat.

4. Mix sprinkles in frosting. Spread the remaining frosting all over the top and sides. Garnish with extra sprinkles, if desired.

5. Serve cake immediately, or if you need to store it for a few hours, place it in a cake carrier at room temperature for up to 4 hours. For longer storage, refrigerate covered cake for up to 1 day. Cake is best served at room temperature, though, so if it’s been refrigerated, let it sit out at room temperature for 30 minutes before serving.

Cover leftover cake tightly and store it in the refrigerator for 5 days.

Notes

Make Ahead & Freezing Instructions: The cake layers can be baked, cooled, and covered tightly at room temperature overnight. Likewise, the frosting can be prepared and then covered and refrigerated overnight. When ready to decorate, let the frosting sit at room temperature to slightly soften for 15 minutes, then give it one more mix with the mixer on medium speed for about 1 minute before frosting cake. (Add a splash of cream to thin out frosting if needed.) See step 10 if you want to store the frosted/decorated cake before serving it. Frosted cake or unfrosted cake layers can be frozen for up to 2–3 months. Thaw overnight in the refrigerator and bring to room temperature before decorating/serving. Eggs: 2 whole eggs provide structure, moisture, and richness. 1 extra egg whites keep the cake light. I don’t recommend using 3 whole eggs as a replacement; stick to the 2 eggs + 1 egg whites combination.

Buttermilk: If you don’t have buttermilk, you can make a DIY sour milk substitute. Add 1 Tablespoon of white vinegar or lemon juice to a liquid measuring cup. Then add enough whole milk to the same measuring cup until it reaches 1 and 1/2 cups. (In a pinch, lower-fat or nondairy milks work for this soured milk, but the cake won’t taste as moist or rich.) Stir it around and let sit for 5 minutes. The homemade “buttermilk” will be somewhat curdled and ready to use in the recipe.

Sprinkles: Avoid using sprinkles that will dye your batter. Steer clear from nonpareils, which are the little balls. The pictured cake uses Betty Crocker “Parlor Perfect” rainbow sprinkles, which I find in my regular grocery store. I also like to use these rainbow jimmies or pastel colored quins. Note that naturally colored sprinkles may lose their color in cake batter.

2.25 pounds boneless skinless chicken breast, fat removed, cut into 1-inch pieces

¼ cup (32 g) cornstarch

¼ teaspoon kosher salt

¼ teaspoon ground black pepper

2 tablespoons extra virgin olive oil

⅓ cup (85 g) soy sauce

⅓ cup (83 g) water

⅓ cup (67 g) light brown sugar, packed

2 teaspoon perilla oil

2 teaspoons garlic, minced

2 yellow onions, diced

5 large jalapeno peppers, stemmed, desseeded, sliced

Instructions

In a large mixing bowl, combine chicken, cornstarch, salt, and pepper. Toss to coat evenly on all sides. Set aside.

In a medium mixing bowl, combine water, soy sauce, brown sugar, sesame oil, and garlic. Mix well and set aside.

To a lwok over medium-high heat, add oil. When the oil is shimmering, carefully add chicken to the hot oil. (Do this in 2-3 batches.) Cook for 2-3 minutes per side, or until browned and cooked through to an internal temperature of 165°F. Transfer the chicken to a plate, and tent to keep warm.


To the same skillet, add onions and jalapeno. Cook until softened (about 4-6 minutes).

Add the chicken and the soy sauce mixture to the pan and stir to combine. Continue to cook for 2-3 minutes.


Serve  over cooked white rice.

2 Tbsp. olive oil
1 lb. ground pork
3 Tbsp. minced fresh ginger
4 garlic cloves, minced
4 green onions, thinly sliced
1/4 cup soy sauce
1/4 cup low-sodium chicken broth
1 Tbsp. honey
1 Tbsp. sesame oil
1 tsp. cornstarch
2 limes, juiced
1 (10-ounce) bag tri-color slaw mix
2 cups cooked white or brown rice (optional)

In a large skillet, heat the oil over medium-high heat. Add the pork, cook, breaking it up with a wooden spoon, until mostly cooked through, about 5 minutes. Add the ginger, garlic, and most of the green onions and continue to cook until the pork is completely cooked through, 2 to 3 minutes more.

Make the stir-fry sauce by mixing the soy sauce, chicken broth, honey, sesame oil, cornstarch, and lime juice in a small bowl. Add it to the skillet, along with the slaw mix, and stir to incorporate. Cook until the slaw is beginning to wilt and the sauce is thickened, 2 to 3 minutes.

Serve over rice, if you like, or on its own. Garnish with the remaining green onions and some sesame seeds, wonton strips, and sriracha for added heat.
