Enoki Rolls

Ingredients
20 thin slices of Beef
2 enoki mushroom, separated into 10 portions
Half a green cabbaged, sliced
1 yellow onion, sliced
4 eggs, beaten
Green onion to garnish

Sauce:
2 cup of Dashi Stock
6 tbsp of Soy Sauce
4 tbsp of Mirin or Sugar
1 tsp of white pepper
One thin slice of beef, one portion of enoki mushroom, roll it up and rest it opening side facing down.
In a bowl, mix dashi stock, soy sauce, mirin or sugar, and black pepper.
Drizzle oil in a pan, and Add onion. Turn the heat to medium-high and pan-fry for 3-4 minutes or until the onion is slightly translucent and soft. Add cabbage and stir until tilted
Place the sliced beef on top of the onion, drizzle in the sauce, put the lid on, and let it cook for 3 minutes.
Remove the lid, turn the beef, and depending on the cut/thickness of the beef, you may need to cook another 1-2 minutes.
Drizzle the egg all over the pan onto the sauce, and simmer for another 2-3 minutes.
Garnish with green onion, and enjoy!
