Pumpkin Chocolate Chip Cookies

Campbell Lab Pumpkin Cookies
Ingredients
• 1 cup canned pumpkin
• 1 cup white sugar
• ½ cup vegetable oil
• 1 tablespoon vanilla extract
• 1 large egg
• 1 teaspoon baking soda
• 1 teaspoon milk
• 2 cups all-purpose flour
• 2 teaspoons baking powder
• 2 teaspoons pumpkin spice
• ½ teaspoon salt
• 2 cups dark chocolate chunks
Directions
1. Preheat the oven to 350 ˚F. Line baking sheet with parchment paper.
2. In large bowl, combine pumpkin, sugar, oil, vanilla and egg.
3. In a small bowl, dissolve baking soda into milk.
4. In a medium bowl, stir together flour, baking powder, pumpkin spice, and salt.
5. Add flour mixture to pumpkin mixture and mix well.
6. Add chocolate chunks, stir just to combine.
7. Drop by spoonful on the cookie sheet and bake in the preheated oven until lightly brown and firm, ~20 minutes.
