Veggie Salsa (Cowboy Caviar)




1. In large bowl combine:

  • 1 small white onion (chopped)
  • 5 stalks of celery (chopped)
  • 1 green pepper (chopped)
  • 1 red pepper (chopped)
  • 1 yellow pepper (chopped)
  • 1 can white corn (drained)
  • 1 can black eyed peas (drained)
  • 1 can pinto beans (drained)
  • 1 can black beans (drained)

2. In sauce pan, boil for 2 min:

  • 3/4 cup vinegar
  • 1/2 cup oil
  • 1 cup sugar
  • Salt & pepper to taste

3. Pour liquid over veggies/beans. Cover and marinate in refrigerator overnight.

To make as a meal, leave out majority of sugar, add in some spices (red pepper flakes, thyme, etc) and toss with pasta.
